Creamy Tomato & Spinach Pasta

I wasn't planning on ever putting any recipes up on my blog because I am not much of a cook. Then I realized that if I find a recipe that is easy and makes my husband think I'm somewhat of a chef then it definitely is a great recipe. I figure why not share it with other women so their families can have an even grander view of their beloved wife/mother/friend (depending on who you feed). With that being said the first amazingly easy, inexpensive and delicious recipe that was a success with my hungry soldier is Creamy Tomato & Spinach Pasta

I got this recipe from Budget Bytes.
The reason I chose to even try this recipe is because it has simple ingredients. Most things of which I have in my kitchen.

Creamy Tomato & Spinach Pasta

5 minutes prep time
30-40 minutes total time

  • Olive Oil
  • Onion
  • Garlic (I used minced)
  • Diced tomatoes (Can)
  • Dried oregano 
  • Dried basil
  • Red Pepper Flakes (optional)
  • Black pepper
  • Salt
  • Tomato Paste (Can)
  • Cream Cheese
  • Grated Parmesan Cheese
  • Penne Pasta
  • Fresh Spinach

This smelled delicious and was about the time I felt like a chef. It really was coming together and all I used 2 cans and spices. 

My husband loves cheese so of course he had me add some shredded mozzarella cheese that we happened to have in the fridge. 

 This was our final result. My husband likes to help with dinner in some way so he paired it with easy to make strawberry lemonade.

(If he offers to help I make sure to have him help, because if we turn their help down enough times they might stop offering)

Bonus Tip:

  • Country Time Strawberry Lemonade
  • Frozen mixed berries/strawberries 
  • Sugar rimmed mason jar

DIY: Memory Coasters

Like many of you, I am on instagram and I follow scrapbook_circle for scrapbooking ideas. For the month of January they partnered up with Memory Coasters, giving their followers a new ideas on ways to be creative.  Turns out a week ago I won a set of 4 memory coasters on their instagram giveaway. I was very excited to put my love of scrapbooking into a project that was a little different my typical 12x12 page.


This is how the coasters arrived. They came from memory coasters with these removable backgrounds. 






  • I pulled out all my scrapbooking supplies, paper, ribbon, stickers, etc. 
  • My first step was to find what pictures I wanted to use. Turns out I had 2 photo booth strips, one of my husband and I and one of my nephews and I.
  •  Then I had to choose what color/patterned paper I would use for the background since I decided to make my own.

  • I chose to make my coasters like a shadowbox by leaving the pictures and some stud jewels loose.
  • I also picked a few 3D stickers and made sure it was all very colorful.
